A cookery masterclass at the home of Thomasina Miers

The course will begin at 9.30am on Friday morning at Thomasina’s home, with a traditional Mexican wake-up call of spiced hot chocolate and an introduction to the intriguing, diverse world of Mexican cooking.
In a small group, the aim is to make everything from scratch with a strong emphasis falling on Mexican cooking methods. You’ll learn to prepare fresh salsas, experiment with unusual cuts of meat, work only with seasonal vegetables and cook beautiful fresh fish. The building blocks of Mexican cookery and its extensive use of traditional spices and herbs will be our guide. A few naughty puddings will sneak into the two days as well.
Thomasina’s approach to teaching is relaxed, informal and fun and she favours food that is fresh, packed with flavour and refreshingly different. The Masterclass will encompass simple, lively dishes and some perhaps a little more complex that you can recreate at home, whether they be relaxed suppers for the family or more spoiling dinners that you cook for friends.
During this two-day course, over lunchtime feasts and relaxing drinks at the end of the day, you'll learn about her approach to sourcing ingredients, making the most of seasonal produce and a few tricks about how to eat well all year round.
