If you already found it difficult to choose sides in the fresh-vs-dry, north-vs-south pasta wars Stevie Parle's SpagWednesday menu will not make it any easier for you. The acclaimed Dock's Kitchen chef will prepare fresh ravioli al preboggion, the sublime pasta preparation of Liguria region of northwest Italy, as a prelude to the beloved speciality of Sardina, Sicily and Calabria: spaghetti alla bottarga, Parle will cook the dry spaghetti until just al dente and toss it with lemon, olive oil and shaved bottargo.
This four-course pop-up dinner will be divided into four overlapping sittings. Each will last about 2 hours.
