Level 1. Training for Judges of Enrobed & Moulded Chocolates
This Level 1. Academy of Chocolate Course on enrobed and moulded chocolates training is for judges, or those who wish to judge at the Academy of Chocolate Awards and any interested chocolatiers and confectioners, to increase their knowledge and understanding of the different styles of filled chocolates.
An approximately 3-hour session with a PowerPoint presentation and printed information with Q&A throughout.
Content presented will include:
- Learning objectives covering historical facts, pioneers, and background information including cacao from the tree to the finished product.
- The tempering process, product definitions, recipes, combinations, and differences. chocolate terminology and ingredients.
- What to look for when judging objectively, to bring greater knowledge, consistency, clarity, and standardisation to the judging process.
There will be a short exam (the exam is not compulsory) that can be taken comprising of 20 x multiple choice questions ca.30 minutes after the presentation.
All attendees who take and pass the exam will receive an individually numbered and signed certificate from the Academy of Chocolate in conjunction with Westminster Kingsway College.
