Learn to bake bread and sourdough at Eastcourt Manor.

Our advanced course covers the more unusual techniques needed to handle very wet doughs (essential for producing modern artisanal style breads), highly enriched doughs laden with butter and eggs and a wide variety of shaping techniques. Participants take home the loaves they have made during the day (typically ciabatta and brioche) and handouts covering all the techniques and recipes from the course.

All courses include:

  • A full-day breadmaking course in a domestic kitchen with a maximum of four participants

  • 12 months' membership of the Real Bread Campaign, part of the Sustain charity, which promotes proper bread, provides advice to bakers at all levels and supports community and artisan bakers all over the UK (worth £25)

  • A bundle of essential breadmaking equipment including banneton, mixing bowl, dough scraper and grignette (dough slasher) worth £24

  • 12 months' breadmaking "technical support". You can call or email us at any time (within reason!) and we'll help you straight away.

Eastcourt Manor

Eastcourt Manor is set in the Medway countryside near Rainham, Kent, about an hour from central London. The house has a rich and varied history dating back to the early 14th century.

All courses take place in a domestic kitchen — everything you will learn can be done at home without fancy commercial equipment — and course sizes are limited to ensure all participants get hands-on individual attention and tuition.

Your tutor, Steve, has been baking bread using sourdough cultures for nearly ten years. He is a dedicated self-taught baker, using a mix of techniques picked up from others and developed through elaborate (and messy) trial–and–error. He is also experienced in skills development approaches from the corporate world which help guide the structure and approach of the Eastcourt Manor bread courses.
