We are in the heart of the Game country - using some of Berkshire’s finest produce we’ll show you how to prepare and cook various types of game, highlighting its versatility and health benefits.  From pies to pave's this course gives you confidence to cook game for any occasion.
Techniques covered:
  • Buying game and what to look for when selecting the best cut
  • Cookery for quick and slow cooked joints
  • Seam boning
  • Confit
  • Stocks and sauces
  • Brining
  • Puff pastry making
  • Sausage roll making
What you'll make:
  • Game Scotch eggs
  • Homemade brown sauce
  • Pheasant sausage roll
  • Game stock
  • Confit duck/rabbit legs
  • Breakdown and truss a wild duck
  • Slow cook venison pave
  • Crown and cook a partridge
Course includes:
  • Arrive at 9.30am for tea and coffee and course introduction
  • Morning to involve demonstrations and practical involvement of boning and preparing the game - ‘feather and fur’ 
  • Tasty game themed lunch
  • How to cook your game whilst retaining maximum flavour and moistness
  • Afternoon will focus on sauces and pie making
  • Course comes to a close at 4pm

Includes notes and recipes from the day.
