Hi, this is Giovanni : an italian baking teacher and Bread ambassador for Real Bread Campaign, an independent charity that researches and shares methods to produce better bread for communities and the planet

Rye flour, Wholemeal flour and Buckwheat flour have interesting nutritional credentials. They have a high level of dietary fiber called beta-glucan, known to lower blood cholesterol and reduce the risk of heart diseases. Also a good source of iron, B vitamins, and resistant starch which generally improves gut health. During the course we will make 3 small bread loaves from scratch with the flour mentioned above. I will guide you through every step, from discussing ingredients, mixing and kneading the dough, proving, shaping, scoring and baking. Suitable for all abilities.
