Professor Charles Spence introduces us to Gastrophysics, the scientific approach to the enjoyment of food inspired by the latest neuroscience insights concerning the multisensory cues from taste, smell, touch, sight and sound, together with the best in culinary artistry, in order to help design more engaging, more enjoyable and more memorable experiences for diners in the future. Expect to be surprised.

Professor Charles Spence is Head of the Crossmodal Research Laboratory, Oxford University. His prizewinning book, ‘Gastrophysics: The new science of eating’ will be on sale at the event.
