Both Ireland and Wales boast a rich cheesemaking heritage dating back centuries. Traditionally a farmhouse affair, each family produced their own unique recipe. This struggled in the 20th Century, with many producers dissapearing over the years... but these traditions has been revived in recent years, with a growing number of small producers crafting award-winning cheeses using time-honored methods and local ingredients.
