Expanding on our Crash Course, the Comprehensive Three Day Course covers the science and technology of brewing in greater depth.
Day one covers the production of beer from grain-to-glass. Day two covers topics essential to making better beer - quality control throughout the process, beer flavour analysis & troubleshooting. Day three lets the candidates loose on a production brewery as they participate in a full brew with New Bristol’s very own Head Brewer, Noel James.
A great opportunity to gain experience on a professional brew kit, this course would be a great foot on the ladder for those wishing to progress into the industry or those with a thirst for a more in depth knowledge of brewing.
Topics covered:
Day 1: Introduction to Brewing, brewing water analysis and treatment, malting, malt analysis and selection, adjuncts, mashing and wort separation, boiling, hop analysis and selection, bitterness calculations, building aroma
Day 2: Yeast analysis, yeast strain selection, fermentation and control, maturation, dry hopping principles and techniques, beer prep for packaging, packaging and dispense
Day 3: Live brew day - brew-house technology, best practice yeast cropping/pitching/storage, quality systems and finished beer stability, off-flavours and troubleshooting, recipe design
This course includes:
- Morning Coffee/Tea & Pastries
- Lunch - this will be provided by one of Bristol finest lunchtime eateries, these include Pieminister, Pinkmans and Harts Bakery. Vegetarian options available.
- An end of day beer in New Bristol's tap bar with the Head brewer and team.
NB: Please remember this is a working brewery so where practical clothes and shoes.
