About Chef Masaki Sugisaki
Born in Saitama, Japan, Masaki grew up in his family’s traditional Kaiseki restaurant before honing his craft in Tokyo. After joining the opening team at Nobu Berkeley Street, he went on to establish Dinings SW3 in Knightsbridge in 2017.
At Dinings SW3, Masaki is celebrated for his contemporary Izakaya-style dining, blending classical Japanese techniques with European influences. His menus champion sustainability, with a signature “gill-to-tail” philosophy that ensures every part of the fish is used, from delicacies like cuttlefish liver to lobster shell reductions. He works directly with South West day boats, sourcing the finest seafood while supporting regenerative fishing practices.
Under his leadership, Dinings SW3 has become known for its refined yet welcoming atmosphere, celebrated signatures such as Toro tartar chips, wagyu sliders, and yuzu cheesecake, and an innovative cocktail and sake programme that embodies Japanese precision and seasonality.
