What you will be making:
Chicken malai tikka
This dish has a unique combination of spices and cream which makes chicken pieces extra tender and tasty.
Ingredients
• 300 gms boneless chicken
• 1 inch piece of ginger
• 2 cloves of garlic
• 1 green chilli, chopped
• Juice of ½ lemon
• 1/2 tsp salt
• 3 tbsp of thick Greek yoghurt
• 3 tbsp of double cream
• 1 tbsp of coriander stem, chopped
• ½ tsp cardamom seeds, ground
• ½ tsp cumin seeds
• ½ tsp coriander seeds
Zafrani pilau
This rice dish is creamy and buttery and has a bite to it with a warming fragrance and the sophistication of saffron.
• 1 tbsp vegetable oil
• 1 tsp cumin seeds
. 1 tbs chopped onion
. 1 clove of garlic chopped
• 1/2 tsp salt
• 1 tsp butter
• 1 cup rice Basmati rice
• Pinch of saffron soaked in milk
. 1 tsp chopped herbs
. 2 tbs pomegranate seeds (optional)
Chicken bhunna

• 500 grams chicken
• 3 tbsp of oil
• 1 small onions, finely diced
• 2 cloves of garlic, finely chopped
• 400g plum tomatoes
• 1 heaped tbsp of ginger, grated
• 1/2 tsp salt
• 1/2 tsp crushed red chili
• 1 green chili
• 1 tsp of coriander powder
• Handful of coriander leaves, chopped

• Medium saucepan, for cooking the curry
• Large saucepan for cooking rice
• Pestle & mortar, to make ginger, garlic paste (you can also use grater)
• Hand held blender or something similar to grind the curry paste
• Wooden spoon
• 6 skewers
