Dandelyan's Botanical Suite


At Dandelyan we like to stray from the norm, and this year to celebrate World Gin Day we've gone ALL out with our friends at Bombay Sapphire. The hotel we're in is a real gem (if you've been lucky enough to stay with us before you'll already know; Tom Dixon designed the whole hotel, not just our space) so we thought we would commandeer a suite for a few weeks and transform it into a tasting room where we can explore extra special stuff with a beautiful botanical terrace to soak up the sun. Definitely ain’t shabby! To top it off, each week will feature a different menu and concept created by 4 of our amazing senior team: Will, Enrico, Jack and Alex!


Dandelyan’s Botanical Suite will seat up to 8 guests and will take them through a tasting of 4 different cocktails over an hour and a half session reflecting the concept chosen. Each menu will look to delve deeper into the chemistry, biology and history behind the liquid you will get to taste.


6 - 10 June | Disco Lyan with Will Meredith

Will Meredith - our Senior Bartender - will be focusing on the Disco Era and how it affected the world of mixology. The Disco Era brought about some rather questionable drinks, but drinks that were always grounded in great flavours just let down by poor ingredients and/or techniques. This event is set to shift the prejudice around these drinks by returning to a more natural origin; reimagining these overlooked classics to a Dandelyan standard. Guests will get the opportunity to drink a Sex on the Beach that's actually good!


13 - 17 June | Luxury in the Plant Kingdom with Enrico Gonzato

Following on from working in some of the most luxurious bars in London, Enrico will explore what luxury means within the plant kingdom. From botanicals worth more than their weight in gold, to species that demand luxury conditions to even grow. The link between Dandelyan's luxury setting and luxury in nature plays perfectly to the tongue-in-cheek approach Dandelyan has to being a luxury hotel bar that offers a neighbourhood vibe.


20 - 24 June | Channelling Expertise with Jack Banks

As much as we love making and doing everything ourselves, we have found that sometimes it's best to leave it to the professionals. Jack - another one of our Senior Bartenders - will explore the relationship we have with the processing of ingredients. Sometimes our skillset means we can extract the perfect form of flavour but sometimes we need to call on our network of friends, distillers, producers and growers to get us the ingredients we need. Exploring that relationship and what actually makes a good ingredient isn't necessarily "homemade, small batch" nonsense.


27 - 30 June | H.M.S Lyan with Alex Lawrence

Alex - our Head bartender - has a passion for all things a bit crazy, but let’s face it - we all love a bit of crazy! This menu will focus on a representation of what Heaps Mad S4!T means to Dandelyan. The guest will know every flavour that is put together but won't understand why/how it has been assembled. A true exploration into the technique and how we can shift perceptions on what it is to push the physical form of ingredients. Weird, wonderful and unique.
