One such country is Sierra Leone, whose rich culinary heritage is beginning to make its presence felt on the British food scene.
Chef Maria Bradford—founder of Shwen Shwen by Maria, a restaurant that celebrates the bold, vibrant flavours of Sierra Leone in the heart of Sevenoaks, and author of Sweet Salone—joins us in the Food & Drink Studio to explore this timely subject.
Through a specially crafted three-course meal, guests will experience first-hand what the West can learn from West African cuisine.
Menu likely to include:
- Starter: Fish huntu in lemongrass soup
- Main: Sweet potato leaves, fermented sesame seeds, goat meat and rice
- Dessert: Grains of Selim ice cream affogato
- Petit fours: Chocolate truffle, smoked whisky and Grains of Paradise
