Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal. Warm & easy, like being with family!

ABOUT THE CUISINE

Ecuadorian cuisine comes from South America and reflects the country’s diverse geography, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood, tropical fruits, vegetables, grains, and spices to create vibrant, flavourful dishes. Meals are hands-on, social, and made to be shared, with signature dishes like Ceviche, Tigrillo, and Empanadas highlighting the warmth, creativity, and communal spirit of Ecuadorian food culture.


ABOUT THE CHEF

A message from our Chef Judith:

“My name is Judith, and I am from Ecuador, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas, an area located between the coast and the mountains, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together, sharing meals, and dancing. In Ecuador, you can find four seasons in one day by travelling from one part of the country to another, and that means that you can experience many different types of food in the country. When I came to England, I started to do some voluntary work in a ‘healthy living’ community group, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon, where the jungle speaks and nature is sacred. My hands work with love, honouring my roots and sharing a little piece of living nature with the world.”

  • Tigrillo (Plantain Hash) | Vegetarian; Eggs, Milk, Peanuts
  • Estofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery
  • Estofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery
  • Empanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs, Gluten (Wheat), Milk
  • Colada Morada (Warm Fruit Punch) | Vegan; None

This menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free). Allergens include: celery, crustaceans, eggs, gluten, milk, mustard, peanuts.

Please let us know if you have any specific dietary requirements so our team is aware ahead of the class, but kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
