Description

This class offers quick and easy, everyday inspiration for vegan and vegetarian meal choices through various techniques using pulses and grains. You will learn 3 tasty recipes which will open a gateway to many more midweek delights, along with plenty of tips and tricks that can make veggie and vegan midweek cooking and meat free Mondays achievable and exciting.


This class covers the following recipes:


  • Smoky Spanish Grainzotto - with roast squash & chestnuts, sun-dried tomatoes, olives & roocket, thickened with chestnut puree. Along with this dish you will get a masterclass and discussion on grainzotto and using vegetable, chestnut and herb purees instead of cream and butter. This is a great concept for vegetarians and vegans, also for those of you cooking for people who aren’t because, contrary to flavour being lost, you actually get more taste by using these purees instead of dairy. The grainzotto and thickening techniques open a whole new world of recipes, flavours and textures and can apply to the whole range of whole grains for lighter take on a risotto.
  • Vegan Hoi-Sin Lentil Burger - with roast mushroom sesame buns and ginger slaw. This is a super standby; a vegetarian burger patty, glazed and glossy with hoi-sin sauce with Asian inspired coleslaw and buns made of sweet and sour mushrooms. The lentil patties can also be served in the way a traditional, animal based protein would be, with stir fried vegetables or a crunchy side salad.
  • Warm Super Seed and Avocado Salad - with Basil Pesto. This salad can be a light lunch or become a complete dinner. The focus will be on the way to get the most flavour into and around the grains, to show you how to maximise every mouthful. We’ll taste the Super Seed base a few different ways, seasoned with sea vegetables as well as herbs and spices. Just by widening your seasoning repertoire, you can learn to enhance your everyday grains in a multitude of different ways. The avocado itself will be crusted popped quinoa, basil, chia and pumpkin seeds to echo the flavours in the Super Seed quinoa.

Led by Merchant Gourmet Cook and ex Le Manoir Cookery School head Alex Mackay, the classes are very hands on at our custom designed cookery school, you won’t just watch and wonder but cook and learn with Alex. He teaches so much more than single recipes, giving you tons of techniques and tips that you can apply to your everyday cooking. Each student will have their own section to cook in and there will be an assistant to do the washing up so you only need concentrate on the fun parts! You will touch, taste, smell and cook your way to confidence in the kitchen.
