Without food preservation we would still be hunter-gatherers. Preserved food fuelled armies and navies and enabled trade, knowledge and culture to develop.

Although we no longer have to cheat the seasons fermented foods are popular again as we rediscover the health benefits of friendly bacteria rich preserves.

Learn how these techniques can be used by you today at home. Join Paul Couchman, the Regency Cook, in The Regency Town House’s kitchen for a short workshop on this ancient craft.
