Description

Fancy making your own kimchi, or sauerkraut? Of just wondered what fermentation is, how to do it or how it came to be?

This training looks at a brief overview of the history and benefits of fermenting food, followed by a practical hands on exercise making your own Sauerkraut, Kimchi & Fruit Drinks to take home. You'll learn the basis, as well as trouble shooting for common questions to help you get it right at home.

Please bring 2 x 300-500ml jars & 1 300-500ml bottle.

Trainer: Ximena Ransom

Ximena Ransom is a 'Patchwork Farmer', growing salads and herbs for Growing Communities' local organic veg box scheme in Hackney. She also teaches cookery and herb growing at Made in Hackney local community kitchen, and enjoys making weird and wonderful ferments, jams, chutneys and pickles with surplus organic veg and gluts of home-grown fruits and roots. These are sometimes sold as 'Patchwork Preserves' in collaboration with North London Action for the Homeless.
