Join us for this 4-part course looking at all the skills you need to cook great food.

Do you love food but need a little help to create delicious, home-cooked meals?

Or perhaps you’d like to go over some basics so that you can really chop and cook with confidence?

This course has grown out of the experiences and feedback that we’ve heard from customers over the past 10 years. We will go back to basics, learning how to use a knife and chop efficiently, safely and well. With that comes more enjoyable cooking, faster prep and knowing how to do things in a way that makes sense.

Then we’ll be looking at meat, fish, and veggies, grains and dressings, all in depth, and all in combination with some delicious recipes.

  • Our classes take place in a home kitchen, so you can feel relaxed and at home, and see how to cook using domestic equipment, just like in your own kitchen.

  • Group sizes are small so that you can receive as much attention as you need to really learn skills and put them into practice.

  • All the classes are hands-on, so you’ll make these dishes yourself, taste them, thinking about the seasoning and the process of making the food. Our goal is that on completing the course, you will feel comfortable buying great produce and turning it into great meals. The fact that these meals are healthy, colourful and fresh is a happy coincidence.

  • The course is suitable for absolute beginners as well as more confident cooks who would benefit from deeper knowledge and understanding of how to up their cooking game. Group sizes are small so we can cover a range of experiences, making sure that everyone leaves with new skills and understanding, and feeling inspired!

Knife skills, Saturday 14th September 2019, 12-3.30pm. (£110 with 15% off when you book the 4-part course)

Ask any chef and they’ll tell you that their knife is their most important tool.

In this knife skills class we’ll be focussing on everything to do with knives and knife skills, because once you are truly confident at chopping, the time it takes you to prepare meals will reduce, and you will enjoy the process much more. Win-win!

In the class we’ll cover:

  • What different knives do and how to choose the best one for different tasks

  • How to look after and sharpen your knives

  • How to hold your knife correctly

  • How to chop like an expert, using lots of different techniques including slicing and dicing plenty of vegetables and fruit, crushing garlic, skinning fish and lots of other tips and tricks along the way.

  • We’ll be making a delicious meal too, so you will leave with recipes to make a three-course meal as well as the skills to chop and slice like a pro!

Fish, Saturday 28th September 2019, 12-3.30pm. (£150 with 15% off when you book the 4-part course)

Fish is the food that is most commonly over-cooked, and we’re often asked how to cook fish well. It should be one of the quickest, easiest and most healthy meals – a great midweek option for busy lives.

We want to demystify fish, giving you lots of inspiration, techniques and tips to make perfect fish every time.

We’ll be looking at:

  • Different methods of cooking fish, including pan frying, searing, curing and roasting.

  • How to know your fish is fresh

  • Slicing fish

  • Making a fish stock

  • Filleting fish

  • Skinning fillets

Meat, Saturday 5th October 2019, 12-3.30pm. (£150 with 15% off when you book the 4-part course)

In this class, we’ll be focussing on meat, how to cook choose your meat, how to treat it well and how to turn meat into delicious meals.

Increasingly meat-eaters are looking at how to eat better-quality meat less often, and often that involves cooking from scratch and trying cuts of meat that they aren’t familiar with. We’ll talk about all that and more in this tasty meat-filled class!

We’ll be looking at:

  • Different cuts of meat and what to do with them

  • Quick v. slow cooking

  • Quality of meat and how to choose great quality meat

  • How to joint a chicken

  • How to flatten chicken breasts

  • Spatchcocking poultry

  • How to know when meat is cooked perfectly

  • Steak, different cuts and how to cook steak perfectly

  • Using the Maillard reaction to develop flavour

  • And we’ll even make some pasta!

Panko crusted chicken schnitzel with new potato salad and crispy capers

Slow cooked beef ragout with homemade papardelle

Veggies, Grains and Delicious Dressings, Saturday 12th October 2019, 12-3.30pm. (£110 with 15% off when you book the 4-part course)

We’re taking a look at how to make delicious building blocks of any meal. Vegetables, grains and super dressings are the key to brightening up meals, whether you are eating alone or feeding a crowd. They also make great lunch boxes!

So join us and be inspired as we take a look at how to eat colourful, flavourful and healthy food that tastes as good as it looks.

We’ll be looking at:

  • Grains, from the familiar to the more obsure – how to cook and store, and make them super delicious

  • How to roast vegetables to the max, as well as steaming and blanching – what to do and how to maintain nutrients

  • Ideas for how to incorporate more vegetables in your diet, and how to make eating veggies quick, easy and tasty

  • How to make the best dressings and sauces

  • Knife skills

We’ll also look at some extra dressings that we’re sure you will fall in love with!
