Description

This one day kitchen based course will enable you to understand key nutritional principles, special dietary requirements and their application to food preparation and the presentation of textured meals and longer term menu planning.

There will be an element of theory and practical work throughout the day.

Learning outcomes

By the end of this learning, you will be able to:

  • Describe a nutritionally balanced diet and factors that may promote healthy eating in different groups
  • Explain why individuals may have special dietary requirements and why it is important for them to follow special diets
  • Identify the different types of diets including cultural and ethical requirements, textured modified diets, diets for individual’s with diabetes, dementia, coeliac disease
  • Identify legislation, policies and guidance in relation to special diets and food intolerance and allergens
  • Explain how you would support the development of menu planning for an individual
  • Demonstrate how to prepare and present person- centred textured modified meals
  • Explain how food processing and manufacturing affects the nutritional content of food

Additional Information

It is preferable that the learner has already completed level one and/or level two Food Safety training before attending this course.

Learners should wear their uniform (normally worn in the kitchen).

If you do not usually wear a uniform, they will need to bring an apron and wear appropriate footwear.

You will need to gain your manager’s permission before booking this course.
