Do you know how to use all of your ingredients with zero waste?

We do, that is why we decided to host, as part of Italian Cuisine Week in the UK, a pasta class which will teach you some fantastic new recipes while highlighting the importance of zero waste.

Our Fin to tail class will be hosted by Antonio Favuzzi, head chef of L’Anima restaurant. Part demonstration and part hands-on cooking, you will make a two-course meal of homemade pasta and a fish main course, using fish from Billingsgate Market. The focus is using all parts of the fish and vegetables that would otherwise be wasted – forgotten or unknown ingredients, leftover focaccia from our bakery, Leggero, and mushrooms from our mushroom farm, grown from locally collected coffee bean waste. At the end of the class you will enjoy your dishes paired with wine from our enoteca, Bottles & Battles.

The class will be joined by chef members of the Sustainable Restaurant Association.
