I’m Silvana, a fourth-generation pasta maker from Naples and the creator of London’s first artisan gluten-free pasta class. After a full year of experimenting with flours, ratios, hydration, and traditional techniques, I developed my own signature method for gluten-free dough that behaves like the real thing.
This class is perfect for coeliacs, gluten-intolerant food lovers, or anyone who simply wants to learn how to craft truly exceptional pasta from scratch.
Each session includes:
- Up to 4 pasta shapes of your choice
- A new gluten-free flour blend to explore
- A hands-on lesson in mixing, kneading, shaping, and cooking GF pasta
- Cooking demo of the sauce that pairs best with that pasta
- A relaxed Italian dinner at the end — the pasta you made, cooked to perfection
You’ll learn the why behind each step — why gluten-free dough behaves differently, how to adjust hydration, how to create elasticity naturally, and the secrets behind getting a perfect al dente bite.
This is not your typical GF cooking class.
This is heritage Italian cooking, reinvented for gluten-free life, and taught in a warm, cosy, friendly home kitchen in Brentford.
