Managers are employed for their skills on the floor and managing people and chefs are employed for their skills in the kitchen, to prepare and serve the very best food to customers - but, increasingly, they have to wear the accountant's hat! So they can rise to this challenge, we are organising a workshop to help chefs, managers and owners to understand the practical steps they can take to make restaurants more successful financially.

The workshop will set out the financial principles and structure of a restaurant and cover important topics, such as:

• Understanding the costs of goods and advice on reducing them
• How to manage staff costs
• How to save money on consumables
• Managing stock turnover
• How to calculate gross profit and what it tells you about the performance of the business
• Menu engineering and analysing the product sales mix

Participants will learn in a dynamic and interactive environment, using real life examples that are relevant to their own day to day experience in the restaurant.
