Description

For two Sundays in May, the chefs who have been working under our Head Chef, Jeremy, will be creating a unique tasting menu experience based on the waste products from our kitchen. The Staff Food Waste Project will involve 4 courses of experimental dishes with big flavour impact using only waste products from our kitchen.

Here a sample of what’s to come:

Lamb Skin, Pistachio & Flower Sandwich

Caramelised Fish, Sorrel & Corn Pottage

Octopus Head Miyan Taushe, Fermented Jollof Rice

Milk Solids, Spent Cameroonian Coffee & Salted Zobo Caramel

The menu will be priced at £45 and you can book tickets here for the 13th or 27th of May.
