We will explore the several varieties of green tea and how they differ substantially due to growing conditions, horticulture practices, production processing, and time of harvest. You will also learn how to make Japanese green tea using authentic traditional Japanese teaware.
We will taste 5 different Japanese green teas. These will range from early spring harvested Sencha, to freshly roasted, nutty Hojicha. The Sencha you will taste is exclusively sourced from 4th generation Japanese tea master Mr. Takada,
You will also learn how to make a perfect Matcha and taste Matcha Wako, one of the highest grades of popular Usucha ('thin tea’). This will be paired with Japanese wagashi sweets.
