We're exploring Spain's distinct regions and their local specialities over the course of five exclusive gastronomic events. Here we head to the Canary Islands.
You might know the Canary Islands better for their cheap holidays and raucous nightlife, but did you know that it is home to some of the most beautiful and culturally diverse food in the whole of Spain?
As a natural point of encounter between the Americas, Africa and Europe, its spices, methods and recipes are a mixture of native Guanche as well as Spanish, The Middle East and Latin American.
It is not unusual to see the marriage of unusual spices with traditional Spanish dishes in the Canary Islands. Take for example the signature Mojo Rojo sauce - a hot and aromatic sauce made from peppers, olive oil, cumin, vinegar and garlic which Canarians love on just about anything.
Rich volcanic soil, unique meteorological conditions and close proximity to the fruitful Atlantic Ocean means that excellent ingredients are produced all year round including some of the most delicious and unique tasting wines in the entire world.
As an Island, seafood is plentiful, so many dishes centre around that. Expect such delights as Pulpo en Dos Cocciones - twice cooked octopus on a bed of sweet paprika mashed potatoes and finished with that delicious Mojo Rojo.
Lubina Al Gofio will also feature on the menu. This is pan fried seabass which is coated in a traditional Canarian toasted flour called Gofio. The fish is served with a thick paste made from this flour, fish stock and wine which is a real delicacy.
Everything on this menu is inspired by La Bandera family recipes and the dishes from the restaurants they eat back home. Take for example the 'Pollo Los Adores' which is a homage to a lowly chicken shop in the hometown of owner Yashin back on the islands.
