Join us for a new session of the Science in Dialogue webinar series.
In this talk, Dr. Anabel López Ortiz (Institute of Renewable Energies, UNAM) will present her research on how light modulation in solar drying can improve the preservation of bioactive compounds such as anthocyanins, carotenoids, and chlorophylls.

Through case studies with strawberries and cilantro, she will explain how spectrally selective materials help retain nutrients, color, and food quality during solar drying. This work opens new perspectives for sustainable food processing technologies that combine science, health, and renewable energy.
