Mark Dawson has been researching, writing and talking about the history of food and drink for the last 20 years. After a PhD from Nottingham University for his study of food and drink in a gentry household in the 16th century, he has conducted extensive research into food and drink in Derbyshire and Nottinghamshire in the 1500s and 1600s.
