In association with DAERA, The Belfast Cookery School is delivering a hands-on fish and seafood masterclass to College lecturers and Home Economics Teachers.

The MaSTE project (Marketing Seafood Through Education) aims to promote local seafood by working with home economics teachers to improve seafood skills and ensure seafood is on the menu across Northern Ireland.

Course Breakdown:

Part 1. Fish Cookery

Theory

Seasonality of fish, in particular, provincial species. The differences between round fish, flatfish and oily fish using examples of the above fish to do so. Which fish are farmed and about how farm raised fish differs in general. Benefits of eating Fish and Seafood

Practical:

Filleting a flat and round fish. Differences between flat and round fish and the pros and cons of cooking them. How to remove fillets of a whole Gurnard (or alternative, seasonal round fish) and go on to cook a Gurnard dish accompanied by a Belfast Cookery School recipe sheet which the guests will then cook themselves. The menu will include a costing breakdown of every ingredient, a costing price, a selling price and a profit percentage which will be discussed.

Part 2. Shellfish Cookery

Theory:

Examples of local in-season shellfish and Health benefits. How shellfish is caught including:

Lobster/Crab Pots; Differences in rope and bed cultivated mussels; Differences in dived and dredged scallops; How traceability is a legal obligation, labelling requirements etc

Practical:

Cooking and preparing a crab and lobster, showing in detail how each is broken down and portioned. Cooking a mussel dish and a langoustine dish. Recipes will be provided including costings and economics of each dish.
