Founders of Dunnet Bay Distillers, Martin and Claire Murray, first met at school in Caithness. After moving away for university and work, they longed to come back home. Martin enjoyed making gin and beer, experimenting with flavours for fun. Claire is creative with a passion for design.

Using the best of both of their talents and skills they forged their plan, resulting in their first distillation in August 2014. Using local botanicals, they had created an earthy and floral gin, with both spirit and bottle design reflective of their Caithness surroundings.

Dunnet Bay Distillers's portfolio includes:

  • Rock Rose Gin: Rock Rose Gin gets its wonderful flavour from a carefully selected and put together creation of local and traditional botanicals. Each one meticulously chosen for their flavour properties to create the perfect taste.
  • Holy Grass Vodka: The hero botanical Anthoxanthum nitens is a delicate, sweet-scented grass known by several common names such as Holy Grass, Bison Grass or Sweet Grass.
  • Mapmakers Rum: Twice distilled using our bespoke copper pot stills, blended with Caribbean rum, Loch Calder water and using Hanna’s expertise, spiced with local botanicals: lemon verbena, scurvy grass, sea kelp and Scottish sea salt.

On Tuesday 12th August, 2025, Dunnet Bay Distillers will host a "Meet the Maker" event at Bonnie & Wild in Edinburgh. Attendees will have the opportunity to:

  • Sample a selection of Rock Rose Gin, Holy Grass Vodka & Mapmakers Rum.
  • Engage with a representative from Dunnet Bay Distillers and learn more about their brand and origins.
