Saturday Night Dopamine Feasts, with Tom Kerridge: Gammon Steak with Dill Pickle Dressing
We’ve got gammon steaks and fried duck eggs on the menu for our final cook-along with the UK’s favourite Michelin-starred chef – a classic feel-good combo that’s starch-light and happy-heavy.
SERVES: 4
CARB COUNT: 9g per person
DIFFICULTY RATING: 2
INGREDIENTS:
- 4 thick gammon steaks
- Vegetable oil, for cooking
- 4 duck eggs
- ¼ tsp dried chilli flakes
- Sea salt and freshly ground black pepper
For the hot gherkin gravy:
- 100g pancetta, diced
- 1 onion, finely diced
- 1 garlic clove, grated
- ½ tsp chilli powder
- ¼ tsp cayenne pepper
- ¼ tsp smoked paprika
- 2 large dill pickles, sliced into discs, plus 50ml pickle liquor from the jar
- 250ml chicken gravy (make it with Bisto gravy granules)
- 60g pork scratchings, lightly crushed
To finish:
- Dill fronds
UTENSILS REQUIRED: 2 x frying pans, 1 x spatulas, 1 x saucepan

Do I need to have a YouTube account to access the streamed sessions?
No, you do not need an account. You can view the session from any device without a login.
Do I need any equipment to take part in any of the exercise classes?
The session details on the event description page will tell you if you need any equipment to take part.
How can I ensure I work out safely?
Make sure your environment is clear of any obstructions and you have sufficient room for your activity of choice. Be sensible and ensure you are wearing appropriate clothing and proper footwear to exercise in – for most workout programmes, slippers, sandals and socks with no grip are not advised. Stay hydrated and have water on hand throughout and after your workout. Finally, know your limits.
How can I access the stream?
Your ticket and subsequent reminder emails leading up to the event will provide you with a direct link to our YouTube channel where you will be able to view the sessions taking place at the times promoted.
What device can I view the event on?
We recommend watching on a TV or a desktop computer for the best experience, but the stream will also work on mobile and tablet.
Do I need a webcam to access the stream?
No, you won’t need a webcam to access the stream.
I am not available at the time that the live stream is taking place. Will the session be recorded and posted at a later date?
If you miss the session, all sessions will be available to watch on the Men's Health YouTube channel immediately after the event has taken place.
