LA FROMAGERIE CHEESE BOARD

SAINT FELICIEN, LYONNAIS
Soft tender medallion shaped cheese with natural washed gold coat with patches of white and blue bloomy moulds after a little ripening. The inside pate houses a soft, golden good flavoured cheese with an almost blackcurrant acid edge.

TOMME DE SAVOIE, SAVOIE
This is the alpage (high mountain) cheese using the morning and evening milk adding semi skimmed milk to the full fat milk. Winter & Spring cheeses use the milk from cattle grazing on lower pastures and the flavour of the cheese becomes lighter & creamier almost verging on sweet fresh cobnuts.

BLEU DE GEX, HAUT JURA
Sharp natural threads of blue veins work their way through the creamy slightly crumbly pate. The crust is rather dry and rough textured when young, becoming a little moist as the cheese matures.
