Unpasteurised Goat’s Milk, Vegetarian Rennet. Pedigree Anglo Nubian goats & additional milk from another local herd. Truncated pyramid with a nutty geotrichum rind. The pate has a mellow tangy flavour, with faint citrus notes.

ROLLRIGHT, LITTLE ROLLRIGHT, OXFORDSHIRE
Pasteurised Cow’s Milk. Traditional Rennet. The cheese-making dairy is just 50 yards from the farm’s milking parlour & the milk arrives still warm & easy to transform into curds. Brine washed rind developes its own native yeasts & bacteria, giving the beautiful peachy apricot hue with a taste that is not too strong but resonates a sweet woodland aroma.

LINCOLNSHIRE POACHER “DOUBLE BARREL” ULCEBY GRANGE, NR ALFORD, LINCS
Based on a recipe Tyn Gryg a Welsh hard cheese made by Dougal Campbell, the chalky soil where the cattle graze gives the Poacher a distinctive savoury acidity, but with a richness from the Holstein breed milk which lends itself to French style Cantal cheeses.
