Soft & melting cheeses with tender bloomy rind made with cow, goat & sheep’s milk. Creamy soft pate tastes sweet & nutty almost like fresh cobnuts.

ADELEGGER URBERGER, BADEN WUERTTEMBERG/ALLGAU
A chewy dense textured semi-hard cheese in the Gruyere style. The rind is rubbed in a wine-laced brine during the ageing process to give fruity & nutty flavours combined with the richness of the milk.

BAVARIAN BLUE, BAD OBERDORF, ALLGAU
Otherwise known as Bayrischer Blauschimmellkase, this is a stunning Bavarian Blue, which is often named Bavarian Mountain-Roquefort. Originally invented by Basil Weixler in 1902, it is a rich & densely creamy blue with a mellow taste & a lovely nutty, toasty edge.
