ABOUT THE CUISINE
Moroccan cuisine comes from North Africa and is known for its rich, aromatic flavours and colourful dishes. It blends Mediterranean, Berber, Arab, and African influences, using fresh vegetables, legumes, spices, and fruits like prunes, apricots, and dates. Meals are hands-on, social, and designed to be shared, with signature dishes like Harira, Tagine, and Zaalouk highlighting the warmth and communal nature of Moroccan food culture.
ABOUT THE CHEFA message from our Chef Sanae:
“My name is Sanae and I grew up in a large family in the north of Morocco, near Fez. I am the youngest in my family and learned to cook from my mother and older sisters. I started helping in the kitchen from the age of ten, making flatbreads and assisting with daily meals.
In Morocco, mealtimes are central to family life, and food is a way to connect and celebrate together. Tagines are a highlight of Moroccan cuisine, combining meat, vegetables, and spices with rich fruits, and every family has their own special recipe. I am excited to share some of my favourite Moroccan dishes in my hands-on, social cookery classes in Bristol and London, teaching you the skills, flavours, and traditions that refugees bring to the UK.”

This menu contains meat (lamb) but is vegetarian-friendly (6/7 dishes are meat-free). Allergens include: celery, eggs, gluten, milk, tree nuts.
Please let us know if you have any specific dietary requirements so our team is aware ahead of the class, but kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT
Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.
While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
