Join us to make hand made round Neapolitan Pizza and Roman style ‘Pizza in Teglia' which is baked in a tray and shared with friends!

About this event

As I am passionate about my Neapolitan heritage I can’t wait to share it with you.

2 sessions: Fri 4th Feb 5-6pm + Sat 5th Feb 3.30-5.30pm  GMT

At our first session you will make the dough by hand using a mixture of a no-knead method and dough folding, chat about about slow fermentation, temperatures and the importance of resting before baking. 

The day after We will make Neapolitan and Roman Pizza using the tools and the oven you own. 

 £ 35.00 per class, per household

Ingredients for one thin pizza 40 x 30cm tray

  • 300g Srong White Flour
  • Water
  • salt
  • 1/4 teaspoon dried yeast (or1g fresh yeast )
  • Approx half tin of good quality tinned plum Tomatoes. (Mutti polpa would be my choice)
  • Fresh basil
  • extra virgin olive oil

Equipment needed: scale, tea towel, mixing bowl, wooden spoon, dough scraper, measuring jug, baking tray (30cm diam or 30x40 cm)

My prerogative is to be able to offer traditional Italian dishes using locally sourced (or fair trade products) from the nearest farms to ensure maximum freshness (and minimum carbon footprint) of everything we make.
