We invite you to a culinary workshop and experience at the World famous Borough Market (London Bridge). Please make sure you read the description below carefully.

This is a two day event. Would be great if you could also make it on Saturday 12/08 16:00-18:00 for a follow-up.

The Project
Researchers from the Royal College of Art, University of Nottingham and Imperial College invite you to the Open Kitchen, an Open Food workshop. Open Food is a multidisciplinary research project that reimagines publicly accessible kitchens as places for innovation. Working with a food manufacturer, we design culinary tools, spaces and experiences to enact creativity through confidence, collaboration and inspiration.

For the Open Kitchen we are working with the World famous Borough Market. We have augmented its kitchen, the Cookhouse, with video and audio recording and playback. Kitchen tools trigger video recording to create a visual repository of what people have made,.


Aim

In this series of studies we are looking into how the available resources influence your creativity. Instead of using recipes we will take a more intuitive approach to cooking to understand how the context of cooking - kitchen, market, tools, ingredients, chef, other people - influences us and our creativity. What are the influencing factors that can help someone feel more confident to experiment?

We will provide you with the basic ingredients to make a noodle dish of your choice. We will also give you vouchers to use in borough market to buy any additional ingredients you might want to use. With ingredients at hand, you will cook your noodle dish. You will be cooking with other peers and you will be encouraged to discuss your ideas and creations. A chef will available to provide assistance, if you need.

During the study you will create dishes and resulting videos, that will be used as basis for the next participants. Your actions with tools and equipment will be video and audio recorded - with a focus on hands, not faces. The videos will be used as guidance for the next studies: An open-ended “recipe” that instead of instructing will aim to inspire people to try their own interpretations of your dishes. Therefore we want to create a cooking system that does not see cooking as an one-off activity in isolation, but as an organic, peer-to-peer activity.


Participants
We are not necessarily looking for food professionals, but rather for people who have a special engagement with food: from people who want a different experience to everyday cooking, would like to contribute to food innovation or are just food enthusiasts - of any food, not just noodles. This is a participatory workshop, so we are looking for people who can work collaboratively, express and communicate their ideas, and listen to the ideas of others. You are welcome to come with initial ideas, but we strongly encourage you to come with an open mind: allow your ideas to be shaped from a discussion you might have with a producer, a tool you want to use or the specific weather of the day. Not all ideas need to be original. You can be adventurous if you feel like and try new things, or take your time to make a simple dish with good quality ingredients.

During the workshop you will be provided with aprons. Please wear shoes without heels or open toes (sandals etc.), and make sure long hair can be tied back.Please also let us know when you sign up if you have any food allergies. Refreshments will be provided. We will also provide vouchers for buying ingredients from the market on the day. You will be compensated for your time and input with a £20 Lakeland Voucher.

Documentation and Data Usage

The workshop will be photographed, and certain parts will be video and audio recorded. All our collaborative work and discussions taking place as part of the workshop will be kept and used for later reference in the Open Food research project. All this data will be anonymised and we will avoid publishing photos where individuals faces are recognisable.
