Description

Who can resist the smell of freshly baked sweet buns or out of the oven biscuits? Those with a sweet tooth or just a love of baking, this course is for you.  We believe traditional cakes, biscuits and desserts are at the heart of good home cooking. Desserts are where you can really impress your guests and we will show you not only how to make but clever presentation techniques to wow your dinner party guests.

Techniques covered:

  • Enriched dough
  • Biscuits
  • Sweet pastry
  • Sponges
  • Puff pastry and lamination
  • Frangipan
  • Plated presentation
  • Chocolate fondant

What you'll make:

  • Chelsea buns
  • Shortbread
  • Almond tart
  • Plated dessert
  • Palmiers
  • Chocolate fondant

Course includes:

  • Arrive at 9.30am for tea and coffee and course introduction
  • An introduction of the basics and alchemy of good pastry
  • The course will cover all key aspects of pastry making, basic principles of folding, whipping and sponges
  • Break for tapas style lunch with a glass of wine
  • In the afternoon you will be bringing the mornings preparation together to form pastries and desserts
  • Course comes to a close at 4pm 

To take away: All notes from the day and some of the day's bakes.
