Vaughan's Cookery School 3 week Professional Kitchen Essentials cookery course is validated by the Confederation of Hospitality & Tourism (CTH) and provides the skills, knowledge and practical experience that would equip you to cook in a: ski chalet; holiday villa; yacht crew or a junior chef in a commercial kitchen. It is also ideal for those wishing to run their own food business or who want to build their cooking confidence. This CTH Award is an internationally recognised qualification.

What will I learn?

The course will teach you how to prepare, cook and finish:

  • Meat, poultry and fish
  • Vegetables
  • Soups
  • Cakes, pastries, biscuits and breads
  • Special dietary requirements
  • 'Naturally balanced' dishes that maximise nutrition without compromising on taste
  • Our CTH professional course also covers all aspects of food safety and good kitchen practices, and you will also complete the Royal Society for Public Health (RSPH) Level 2 Award in Food Safety in Catering.
  • Students are taught in small groups (maximum 10) and receive a practical, hands-on experience.

The course takes place full-time (9.30-4pm) in Devizes, Wiltshire, over a three week period and costs £1750.

Taught by Catering Professionals

Peter Vaughan, an award winning chef and member of the Royal Academy of Culinary Arts, with over 26 years' experience, heads the team. He has worked in a variety of fine dining restaurants and now has his own restaurant and event catering business, as well as the cookery school. Peter is known for his infectiously enthusiastic teaching style that always leaves you inspired.
