Although pumpkin carving has become synonymous would Halloween, it wasn't always that way. The tradition has its roots in ancient folklore, which referenced carving turnips, then later potatoes and beetroots.
In modern times pumpkins have been bred and harvested for the sole purpose of carving, meaning that their culinary uses are often neglected and a huge amount wasted.
This Halloween, we invite guests to take up the tradition but with lesser known varieties of squash that they will be able to enjoy in a variety of dishes.

Saskia Jiggens is a UK-based artist and founder of House of Hesperides, a wildcraft brand dedicated to celebrating the beauty of the organic and ephemeral. Her practice transforms seasonal and natural materials into works of quiet beauty. A graduate of The Courtauld Institute of Art, she brings an art-historical sensitivity to her creations, which range from intricate pumpkin carvings to immersive public art installations. Her work has been commissioned across London, and she has shaped cultural engagement for leading sculpture festivals, including Kensington + Chelsea Art Week and Mayfair Art Weekend. Through her craft, she reveals the poetic potential of the natural world.
