REHIS Elementary Food Hygiene E-learning

Overview

A self-paced e-learning course covering the basics of safe handling and storage of food.

This REHIS certified e-learning course will provide participants with basic knowledge of safe and hygienic methods of handling and storing food. It is suitable for all employees whose work involves preparation or serving of food of any type.


Course content

• An introduction to food hygiene

• Bacteria and their characteristics

• The incidence of food poisoning and its prevention

• Personal hygiene and working habits of the food handler

• The working environment

• Common food pests and their control

• Cleaning practices

• HACCP

• Food legislation


E-learning

This course is delivered via the REHIS Highfield e-learning platform. Once candidates have been enrolled onto the Highfield system they will work through the e-learning in their own time, at their own pace. There are ten modules to work through, at the end of each one there is a mini assessment. Once all ten modules are complete candidates will attend one of our Learning Centres to sit their assessment.

While working through the e-learning candidates will have access to remote support from a registered REHIS tutor via email.


Assessment

Once candidates have completed their e-learning they will need to attend one of our Learning Centres for assessment. Assessment can be sat at the following UHI North, West and Hebrides Learning Centres:


  • Alness
  • Auchtertyre
  • Dornoch
  • Fort William
  • Gairloch
  • Stornoway
  • Thurso
  • Uist (Benbecula)
  • Ullapool


Assessment dates

Candidates can book their assessment at any of the above centres on the following dates and times. These slots include a 30 min recap session with our tutor over Teams before the candidate sits their 30 min assessment.

Monday 26th January 10.00-11.00

Please note that UHI North, West and Hebrides will be closed from Monday 22nd December 2025 - Sunday 4th January 2026 for the Festive break. Joining instructions for any bookings made during this period will be sent week commencing 5th January.


Cancellation Policy

UHI North, West and Hebrides can provide a full refund or transfer e-learning to another candidate as long as the course has not been started. Once e-learning has begun the course cannot be returned.
