Our series of 1 day ‘Uncut’ Meat Courses aim to teach a variety of butchery skills to enable our guests to confidently purchase ‘uncut’ carcasses directly from Durslade Farm to butcher at home.
The course starts in a field (wellies required!) with our farmer, Paul Dovey, who will talk about the animal breeds, welfare and grading. This will be followed by an introduction to The Durslade Farm meat story by Steve Horrell from Roth Bar & Grill. Our talented team will then carefully guide you through the butchery and knife skills required to prepare half a lamb. Lunch will break up the day before we spend the afternoon focusing on the preparation of various cuts and their uses etc. We will round up the day with tea and shortbreads and a Q&A.
