Learn to make sourdough rye breads, from light caraway flavoured rye loaves to medium dark European rye sourdoughs and a black bread or pumpernickel. Learn how to adapt our unique sourdough starter to the requirements of rye flour and the different processes to prepare, handle and bake rye based doughs. Participants take home a wide variety of rye breads prepared on the day, recipe sheets and our sourdough starter.
All courses include:
A full-day breadmaking course in a domestic kitchen with a maximum of four participants
12 months' membership of the Real Bread Campaign, part of the Sustain charity, which promotes proper bread, provides advice to bakers at all levels and supports community and artisan bakers all over the UK (worth £25)
A bundle of essential breadmaking equipment including banneton, mixing bowl, dough scraper and grignette (dough slasher) worth £25

Eastcourt Manor is set in the Medway countryside near Rainham, Kent, about an hour from central London. The house has a rich and varied history dating back to the early 14th century.
All courses take place in a domestic kitchen — everything you will learn can be done at home without fancy commercial equipment — and course sizes are limited to ensure all participants get hands-on individual attention and tuition.
Your tutor, Steve, has been baking bread using sourdough cultures for nearly ten years. He is a dedicated self-taught baker, using a mix of techniques picked up from others and developed through elaborate (and messy) trial–and–error. He is also experienced in skills development approaches from the corporate world which help guide the structure and approach of the Eastcourt Manor bread courses.
