Salon Series: A discussion with Orsola de Castro

We are proud to be able to announce that Spring is launching a programme of speakers and events called the Salon Series, to be held in our plant filled conservatory, The Salon.
Curated by Skye Gyngell, speakers will educate and entertain guests in a variety of topics, enforcing and expanding on some of Skye’s core philosophies and interests, ranging from food wastage, to ethical fashion and ground-breaking design.
The first in the series is the ethical fashion designer, Orsola de Castro, the founder of Fashion Revolution, a not-for-profit charity raising awareness of the true cost of fashion. Orsola will be leading a discussion on the impact of the fashion industry on the world and the similarities between food and fashion with how both industries are evolving and what people can do to promote and engage in local and less intensive habits of consumerism, including the recent popularity in upcycling fashion. Joining Orsola are a group of women leading the ethical fashion revolution including, freelance journalist and fashion features director at Tank Tamsin Blanchard, Maria Nishio Senior Lecturer at Central Saint Martins, and the fashion designer, Katie Jones.
This discussion will tie in with the new ‘Scratch menu’ at Spring, which reduces food waste by upcycling the surplus ingredients from the a la carte menu, which would usually have been thrown away at the end of day.
The event will be accompanied by a selection of seasonal canapes and cocktails made by Skye and her team at Spring, all of which are made using some of the UK’s finest, locally sourced produce, including vegetables from the critically acclaimed biodynamic farm Fern Verrow, who has an exclusive partnership with the restaurant.
