We’ve managed to persuade world renown Master baker and teacher from the Artisan School of Food, Wayne Caddy, to stay a few days longer on the island to lead some introduction workshops for Noa friends.
As part of our commitment to our team and to producing real bread we’ve been bringing over Wayne to visit us several times a year to train and coach our bakers.
This one day course will give you the opportunity to learn all about wild yeast and sourdough bread-making in the heart of our bakery.
All you need to make real sourdough bread is flour, water, time for the wild yeasts to develop and an understanding of this artisan process. Wayne will share his baking expertise to give you a fascinating insight into the science of long fermentation, as you also learn about mixing, proving and baking. During this hands-on course, you will discover how to create and care for your own wild yeast starter, as you make a selection of loaves including:

Seeded Sourdough

Rye Bread

Pizza for lunch

Ciabatta
Class sizes are small, deliberately limited to 10 people. This allows for as much individual attention as possible alongside group teaching. The day is an open conversation, relaxed and informal, that will send you home eager to continue baking – and with an armful of goodies!
The days are fully catered for, we’ll provide refreshments throughout the day and you’ll help make the pizzas you’ll eat for lunch!
As well as all the bread you make we’ll provide you with a bag of baking loot to take home, a Noa bag, Noa tshirt, recipes and proving banneton. We’ll provide all the recipes and equipment you’ll use. You just need to bring your eager selves!
9am intro and refershments ready for a 9.30 course start.
FULL DAY COURSE: £150pp (100% payable upon time of booking, refundable up until two weeks before class date).
Unless stated on individual courses the minimum age for our bread classes is 16 years old.
