Scottish Chefs (Federation of Chefs Scotland) were founded in 1994 and in this our 25th Anniversary we are delighted to announce exciting news and details of The Scottish Chefs Conference to be held on Monday 4th November 2019.


We are delighted to be hosting our 2019 Conference at the world class conference facilities of the Edinburgh International Conference Centre (EICC). The 600 seater auditorium of the Pentland Suite at EICC will offer a greater experience for our sponsors, delegates, students and most importantly our speakers and guest chefs in addition bringing the Conference to Edinburgh opens up opportunities to attract delegates from the vibrant restaurant scene of the city.

Following the success of last year’s event we will once again be presenting the Conference on a theme which this year is 'The Key to Culinary Success '

We are delighted to announce the chefs and speakers who will be presenting this year.


John Higgins , Director and Corporate Chef, George Brown Chef School, Toronto, Canada

John originally from Scotland emigrated to Canada over 30 years ago and has since become one of the country’s most sought after chefs, prior to moving to George Brown College he was Executive Chef at the King Edward Hotel , Toronto . Representing Canada he has won gold medals across the globe and is the Manager of Team Canada and was a member of the International jury at this year’s Bocuse D’Or in Lyon, France

Simon Hulstone, Chef Proprietor at the 1 Michelin Star Restaurant, the Elephant, Torquay Devon

Simon is a former Roux Scholarship Winner, he has represented the UK on 3 occasions at the Bocuse D’Or, a multi award winning chef he has achieved Gold Medals and captained England at The Culinary World Cup and Culinary Olympics. He is a consultant chef together with Heston Blumenthal for British Airways; he also provides consultancy for Nestle, Jumeirah Hotels and is a regular contributing chef for BBC Saturday Kitchen

Jorn Lie, National Culinary Team Manager of Norway

Jorn Lie is the Manager of the Norwegian Culinary Team one of the world’s most successful team of chefs, regularly in the top 3 competing nations Jorn in addition to operating 3 restaurants is also a multi award winning chef and will speak on how the Nordic countries of Sweden, Denmark, Finland, Norway and Iceland consistently are ranked the world’s best chefs

Orry Shand, Executive Chef at Entier Food Services and Scottish Chef of the Year 2019

Orry Shand was named Scottish Chef of The Year 2019 at this year’s Scottish Culinary Championships , Orry is also the current Team Captain of The Scottish Culinary Team and has won medals at both the Culinary World Cup and IKA Culinary Olympics , he will represent Scotland as one of only 20 chefs invited to compete at Global Chef in St Petersburg , Russia in 2020


Shona Sutherland,
Chocolatier / Patissier and proprietor of Taystful, Blairgowrie, Perthshire

Shona Sutherland is an award winning Chocolatier and Pastry Chef , owner of Taystful in Blairgowrie she has recently been named CIS Excellence Pastry Chef of The Year , Shona is highly sought after all over the country and is a member of The Scottish Culinary Team where she has won medals both as a team member and as an individual for her works in chocolate . Shona will once again represent Scotland at the 2020 IKA Culinary Olympics in Stuttgart, Germany.

Charles Carroll CEC, AAC, HGT, Executive Chef, River Oaks Country Club, Houston, Texas

Charles Carroll is a multi-Gold Medal winning chef and also author of many cookery books , he has represented USA on 8 occasions at International Culinary Competitions all over the world, A Past President of The World Association of Chefs Societies he has cooked for many USA Presidents and has been honoured by the White House for his humanitarian service to the USA Military . Charles is an inspirational speaker on leadership and also has a regular podcast in the USA , he is currently Executive Chef at the exclusive private members River Oaks Country Club in Houston ,Texas.

Marc Crothall, Chief Executive, Scottish Tourism Alliance

Appointed as the first CEO of the Scottish Tourism Alliance (STA) Marc has been at its helm since its inception in 2012. He is responsible for the day to day operations and leadership of the organisation which is the overarching tourism industry trade body and acknowledged as being “The lead representative voice of Scotland’s Tourism Industry”.

The Scottish Salmon Student Challenge

A regular feature at the Conference is the Student Challenge Competition sponsored by Scottish Salmon full details and information on entry will be sent to all Colleges in August
