Join Robyn Gray and Jason Laidlaw as they host a special encore presentation of "The Bartender's Book Club: Liquid Intelligence by Dave Arnold".

As a lead up to this year's Science of the Cocktail Gala at Science World February 8th, Spirited Sessions presents an edition of the Bartender's Book Club, where we will dissect "Liquid Intelligence: The Art and Science of the Perfect Cocktail" by Dave Arnold. Focusing on the science behind the ingredients and techniques that we use every day behind our bars, Liquid Intelligence was authored by Dave Arnold, the man behind New York's revolutionary food laboratory/cocktail bar Booker and Dax. Widely considered a landmark endeavour in the field of cocktail literature, it is the first book to do a comprehensive study of the physics and chemistry of the activities that go on in a cocktail bar, laid out in a format that's approachable by bartenders and laypersons.

We'll be delving in to many of his techniques and experiments, revolving around dilution, chilling, shaking, and stirring. As well, expect to see centrifuges spinning, gels clarifying, and to have a chance to familiarize yourself with some liquid nitrogen techniques. We'll also be giving some of his inventions a "spin"...
