ABOUT THE CUISINE
Sri Lankan cuisine is vibrant, aromatic, and shaped by centuries of cultural exchange and coastal trade. Meals often balance bold spices with fresh coconut, tropical fruits, lentils, and seafood. Akram’s dishes highlight the heart of Sri Lankan home cooking, where hand-prepared curries, sambals, and rice-based dishes bring layers of flavour and warmth to the table. Expect richly spiced, fragrant meals that showcase the island’s culinary heritage, blending vegetarian, seafood, and meat dishes in a communal and celebratory style.
ABOUT THE CHEF
A message from our Chef Akram:
“Hello, My name is Akram, I come from Sri Lanka. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry, made with fresh coconut. I love playing cricket and on Sundays, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire, in Halifax, and I worked in a community kitchen as a chef. More recently I have moved to London and I am excited to continue my work as a chef, cooking my Sri Lankan cuisine”.

Please let us know if you have any specific dietary requirements so our team is aware ahead of the class. Kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT
Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.
While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
