During this demo Nick Barnard, author of Eat Right, and co-founder of Rude Health, will teach you how to separate water and whey from butter to make highly nutritious Ghee.
Against popular belief, ghee is more than just clarified butter. Ghee is clarified butter that has been heated at a higher temperature and for longer, which not only separates or evaporates the milk proteins but drives off most of the water too. Ghee has a higher smoke point, between 200-260 degrees, making it a very useful animal fat, capable of withstanding high cooking temperatures, and with a naturally very long shelf life too.

About Nick Barnard and Rude Health
Rude Health is a family run, London-based food and drinks company co-founded by husband and wife, Nick and Camilla Barnard. Rude Health was founded in 2005, the same year that Camilla and Nick moved house, got married and started a family.
