The Exchange continues it's series of guest chefs with Selin Kiazim
Selin Kiazim, until recently head chef at award winning Kopapa restaurant in central London, comes to the Rooftop Cafe as guest chef for one weekend. Selin’s food takes inspiration from her Turkish Cypriot heritage and is focussed around communal eating and encouraging conversations about food by sharing dishes between diners. She is inspired by flavours from travels, from friends and from fellow chefs. Selin’s food has no boundaries or easy categorisation, she is constantly experimenting and innovating, combining classic flavours with new ingredients from around the world.
Selin enjoys competitive cooking and has competed all over the world including Mexico, New Zealand and Geneva, winning numerous titles. Highlights have included: bronze and silver awards with junior Team GB in the Culinary Olympics in 2008; finalist on BBC3’s Young Chef of the Year in 2009; Spanish Young Chef of the Year in 2010 and then finalist/semifinalist for National Chef of the Year in 2010, 2011 and 2012.
Undoubtedly, Selin Kiazim is one of London’s most exciting new female chefs.Ahead of plans to start her own place we're happy to welcome Selin to our grill for a weekend of great food.

Wood fired Turkish bread served with:
Caramelised onion tapenade, paprika yoghurt & tomato tartare
BBQ quail glazed with oregano, sumac & palm sugar,
minted caper dressing
Kisir: Spiced bulgur wheat, spring onion & walnut salad
BBQ Miso asparagus, sticky green beans & fennel seed
Crispy lamb breast glazed with pomegranate sauce, yoghurt & herbs
Chilli roast cauliflower, Turkish pistachios, red onion & parsley
BBQ Mackerel, yellow bean dressing, watermelon,
smoky mushrooms & coriander
All served with a Sea purslane, Romaine lettuce & feta salad
for the table
Lemon sponge, kaymak honey, ginger poached peaches &
caramelised rosemary filo shards
