The Future of Food: Nottingham innovations and global food security… as told through one risotto

Join Nottingham’s double Michelin-starred chef Sat Bains as he serves a risotto, using ingredients linked to world-leading research at The University of Nottingham.

Sat’s risotto will be a delicious entrée into a debate with our academics around food, sustainable crops for the future, energy and how we can address a key challenge of our time - Global Food Security.

In the Future of Food event, Sat will discuss the risotto’s ingredients, which will also inform commentary by Professor Joanne Hort, SABMiller Chair of Sensory Science and Head of Brewing Science at The University of Nottingham, and Debbie Sparkes, Associate Professor of Agronomy, on innovations in sustainable crops at our Sutton Bonington and Malaysia campuses. Mark Gillott, Professor of Sustainable Building Design, will highlight the implications for energy use in food production and consumption.

The audience of MPs, civil servants, industrial collaborators and representatives of funding agencies, learned societies and the food and agriculture industries will then be invited to sample the risotto, guided by my research into how taste, choice and other factors influence our perception of food.

Please allow 30 minutes to clear security and get to the meeting room.
If you are attending more than one event in different locations within the Houses of Parliament, you will not be able to simply walk between these venues. You will need to pass through security again. Please allow time for this.
